In the glass, the wine displays a brilliant cherry color with garnet highlights. Intoxicating aromas of fresh raspberries, cherries, peonies, lilacs and strawberry. The palate is soft and voluptuous with satin tannins and an energetic acidity that frames the super-charged fruit as it leads into an dynamic and elegant finish.
The Parize family has been making wine in the Côte Chalonnaise of Burgundy for six generations. Based in Givry, the vineyards of the domaine cover 9 hectares, seven of which are planted to Pinot Noir and two to Chardonnay, with an average vine age of roughly 30 years. Laurent Parize, the current generation in charge, is a man who works extremely hard among his vines. He embraces organic practices in the vineyards, including cultivating grasses instead of using herbicides and adding organic fertilizers when necessary. In order to increase the quality of his fruit, Laurent prunes severely, limiting the number of bunches per vine while also utilizing a green harvest to limit yields and increase the concentration of his grapes. The results are spectacular, and when combined with his vigilance in the cellar, lead to wines of clarity, finesse and flavor.
