All of Cobb hill cheeses are made from raw milk from pastured Jersey cows that are bred and raised here at Cobb Hill by their dairy enterprise partners Cedar Mountain Farm. From May to September the herd grazes on pasture maintained without artificial pesticides or fertilizers. During the non-pasture season, the Jerseys eat hay from Cobb Hill's own fields and neighboring farms.

Cobb Hill Cheese has been handcrafting artisan cheeses, on the farm in Hartland, Vermont since 2000. We started out with our award winning Ascutney Mountain Cheese, then developed Caerphilly, a Welsh style cheddar suited to the rich milk from the cows. In 2016 we branched out into making farmhouse style Gouda. Then we started getting our young Gouda smoked at Grafton Village Cheese. Eight months later we had our first aged Gouda and smoked, aged Gouda for sale. We have seasonal and limited edition batches of Havarti, Brownsville Trail Caraway Ascutney and Cows in the Kitchen garlic and herb Havarti. Every batch of cheese is made from fresh milk every other day. Cedar Mountain Farm's jersey cows provide a rich milk which imparts a delicious, nutty flavor to the cheese. Our cheese makers follow the age-old process of heating milk, adding lactic bacteria and vegetable rennet, hand stirring the curd, hooping and pressing.
