Chateau Gaudin Pauillac 2014 - Bordeaux, France
Varietals: Cabernet Sauvignon, Malbec, and Merlot
Flavors of dark chocolate, stewed plums, dried Palmyra figs, and aged pipe tobacco.
Located between Saint-Julien to the south and Saint-Estèphe to the north, this modest Pauillac château grows 70% Cabernet Sauvignon and 30% Merlot on clay and limestone soils, with the vines averaging 35 years of age. Hand harvesting, sorting and de-stalking are practiced. After a fermentation in temperature- controlled steel vats with pumping over the must, the wine is macerated for 15 days to 3 weeks. Then the malolactic fermentation takes place once the juice has been run off from the grape skins. It is then lightly filtered before being transferred to 100% new oak barrels for maturation, with bottling 12 months later.
