Cardedu’s vineyards [car-DAY-do] are on the island of Sardegna, in its
most mountainous and sparsely populated southeast. The local Vermentino grape is
fermented with native yeasts; it’s dry farmed without pesticides or herbicides. Decomposed granite soils give a savory freshness: sea salt, sage, basil, rosemary, cedar, and a foundation of stone fruits.
